Italian B.M.T. style — salami, pepperoni and ham layered into Aldi sub rolls, baked until the meat crisps and the bread toasts, then loaded with cold shredded lettuce, paper-thin red onion, jalapeños and peri peri sauce. The hot and cold contrast is everything.

Prepare the salad

Finely shred the gem lettuce and slice the red onion as thinly as possible — paper-thin is the goal. Drain the jalapeños if using from a jar. Set everything aside in the fridge so it stays cold.

Warm the meat

Preheat your oven to 180°C fan. Open the sub rolls and layer on the salami, pepperoni, and ham. Add cheese slices on top if using. Bake for 5–7 minutes until the meat edges begin to crisp, the bread is lightly toasted, and any cheese has fully melted.

Build the subs

Remove from the oven. Immediately top with the cold shredded lettuce, red onion, and jalapeños straight from the fridge. Drizzle generously with peri peri sauce. The contrast between the hot, crispy meat and the cold, fresh salad is what makes this.

Serve immediately

Serve straight away while the contrast between hot and cold is at its best. Add any optional sides — skin-on fries, crisps, or a side salad. Eat immediately — these don’t sit well.

Put the meats on the bread before heating — don’t pre-cook them in a pan. They need to crisp directly against the bread so the juices soak in as they bake.
Let the pepperoni crisp slightly at the edges. Those little curled, slightly charred bits are where the flavour is. Don’t pull them out too early.
Shred the lettuce as finely as possible and slice the onion paper-thin. The texture contrast with the hot meat is exactly what makes this taste like a proper sub shop sandwich.
