Full Recipe: Chicken Chalupa Pitta Bread

Serving Size

1/4 Chicken Mix + 1 Pitta

Ingredients

  • 400g boneless skinless chicken thighs
  • 90g plain non-fat Greek yoghurt
  • 60g low-fat cottage cheese
  • 50g sriracha
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried parsley
  • Pinch of salt
  • 1 wholemeal pitta bread
  • 25g grated cheese
  • 15g lettuce
  • 1/2 tomato

Recipe

Make the Chicken Mix:
Blend the Greek yoghurt, cottage cheese and sriracha until smooth.
Dice chicken thighs into bite-sized pieces and add to slow cooker.
Add garlic powder, onion powder, dried parsley and pinch of salt; stir to coat. Pour over blended sauce and stir again.
Cook on low for 4–5 hours or high for 3–4 hours.
Assemble the Pitta:
Slice open the pitta and add the grated cheese first.
Fill with 1/4 of the chicken mix.
(Optional) Air fry at 200°C for 2 minutes for a crispy pitta.
Top with lettuce and tomato.
Serve hot!
